The most perfect fall coffee and drink recipes for at home or the coffee shop
If you have read any of our other coffee shop recipe posts then you know how we do it around here. No fancy pictures and paragraphs of text to have to read through for only five semi-decent and overly complicated recipes.
We like lists. Easy and straight to the point. We have families and coffee shops to run!

Side Note: All of our recipes are for 12 oz hot/16 oz cold. Adjust recipe accordingly for your drink sizes.
My professional opinion on pumpkin spice season. Buy the sauce and not the syrup flavorings. I have not found a pumpkin spice syrup I truly love yet. The sauce from any brand is much much better and adds that sweet flavor people have come to expect via “Shmarbuks”.
Technicalities: 1 pump = 0.25 oz Caramel=syrup, caramel sauce=the thick sugary stuff
Fall Coffee and Chai
I have found most coffee recipes do pretty well as chai recipes as well. Use your own judgement on that though. I use the Oregon Chai Extra Spicy Chai Concentrate in our trailer. It’s shelf stable so it doesn’t need refrigerated, and it makes a really nice drink either iced or hot. I simply follow the bottle instructions and put in 2.5 oz of concentrate for 5 oz of milk in our iced drinks OR 4 oz concentrate for 8 oz milk in our hot drinks. It’s a simple 1:2 ratio.
- Caramel Apple- 1 pump caramel sauce, 2 pumps apple syrup
- Harvest Moon- 1 pump dark mocha sauce, 1 pump pumpkin pie sauce, 2 pumps toasted marshmallow syrup
- Scarecrow- 2 pumps salted caramel syrup, 2 pumps toffee nut, drizzle of pumpkin pie sauce
- Cinderella Pumpkin- 1 pump white mocha sauce, 1 pump pumpkin pie sauce
- Classic Pumpkin Spice- 2 pumps pumpkin pie sauce (I really like the Davinci Pumpkin Pie Sauce not the syrup)
- Sweater Weather- 2 pumps toffee nut, 2 pumps toasted marshmallow
Fall Soda Based Drinks and Ciders
We also can add Lotus Energy or red bull to the soda specials.
One big selling point for our sodas is that we use edible brew glitter to add a little sparkle and people go nuts over it!
- Classic Cider- Just plain ol’ hot cider in a cup can never go wrong
- Autumn Fizz- 5 oz cider, pumps cranberry, ice, top with club soda
- Harvest Citrus- 3 pumps cranberry, 3 pumps of whatever citrus syrup on hand, ice and club soda
- Wicked Witch- 3 pumps blackberry, 3 pumps pomegranate, 1 oz ginger ale, ice and club soda
- White Zombie- 2 pumps white peach, 2 pumps vanilla, 2 pumps coconut, ice and club soda
- Crispy Leaves- 2 pumps apple, 2 pumps raspberry, 2 pumps orange or whatever citrus you have, ice and club soda
Note: All names of these specials are totally made up and please feel free to change the names as you see fit or to match the vibe you are going for.
All the wordy stuff about fall coffee and drinks
It seems like Autumn is the trendiest and most waited for season of the year and coffee shops everywhere have hopped on board the Pumpkin Express. Personally, I have never been a huge pumpkin pie fan (I always loved pecan pie more) and so the whole “PSL” craze was never my thing. PSL stands for pumpkin spice latte by the way if you need some decoding.
However, people love it and it would be a huge mistake to not include some pumpkin drinks on your fall specials at your coffee shop. I think its the best option to include the trendy pumpkin drink and then rotate around the other recipes listed above. Also, I am super surprised at how popular Chai has been. I added it to our menu towards the end of summer and people are in love and order it all of the time. Like I said before, the Oregon Chai extra spicy concentrate is by far the best we have tried and it’s a huge bonus that it is shelf stable and I don’t have to find space for it in my fridge.
People are really into specialty energy sodas as of late too. We use the Lotus Energy at our shop but I know of quite a few who also offer red bull drinks which would also work with the recipes. I’ve been playing round with the idea of offering both options but am not sure if it would really make a difference in what people order for it to justify another inventory (and space in my coffee trailer) item.
